what is the best method to cover your tracks after digging for a hit? I could imagine cutting the grass out in a circle and remove the piece as a whole to be able to fill it back in afterward. simple as that?

I found using a thin blade trowel and using an inward undercut pattern that's kind of irregular in shape works really good for me in a grassy or brushy type area. Some people will tell you to use a long fixed blade knife, but you need to check with local laws because in some areas carrying a fixed blade knife of any length can be illegal in less your hunting.

I don't hunt parks or schools much anymore but when I did I used a long blade knife to cut a plug then replace it. fstorme is right about checking the law's, a knife could be a no no now.
