G'day People,  for the last 7 weeks I have been trying to make a good Chilli, With no Success

So far I've had about 3 or 4 that were too salty Because of Stock Cube Abuse, One that was a Mystery, Two that were ok but not describable as Chill
and now my Latest creation which is Ok but it will take the Chrome off a Trailer Hitch,

Why do so many American's Eat Chilli and how hot is Hot and what is the correct way to make it, Thanks

AU

Saying Chilli is like saying CAR!      If you went too 200 restaurants and ordered Chilli, you would never get the same thing twice.

Basic Chilli is.

Meat, Ground.  Pork, Beef or even Poultry.   Meat does not need to be ground.   I like Cubed my self.

PreCook meat until 1/2 cooked  or more.

Red Pinto type beans.   Cooked until mostly done.    It's good to cook yur Onions along with the beans.

Spices:

Red or Green Chili's  This one is up to your Heat Factor you like.

Cumin powder.

Garlic Powder or whole.

Bell Peppers various colors,  Diced Cilantro, Tomatoes all Optional.

Combine all above and simmer mingling flavors and thickening.

With the Basic stuff above your on your own as to what happens.

Welcome to the World of Chili!!!!!!!!!!

Some do and some don't  .

Yea, I forgot Tomatoes in the list above.

If you do and like em chunky style add them in last.   I don't do the Paste thing.

Texas chili is almost always Red.   Chili's and Powder added.

Again depends on how or even if you want it hot.

Thanks Mate,

So I Add 2 or 3 Chilli's  and Powder,  That's where I have been going wrong I added a Chilli Sauce Mix from Uncle Bens and 3 Desert spoons of Tabasco Type Sauce,

But the Chilli Heat only happened once you swallow it and you throat got a bit Hot But not in the mouth,

It turned out more like a Mystery Tour than Chilli

Most Red Chili powder you get these days just turns your stuff red and adds the Red Chili flavor with little heat.

I like mine spicy but like to be able to taste food after I eat some.

Some people here in New Mexico, put so dang much heat in the food you can't even taste what your eating after the first few bites.

Even if I put Red Chili powder to get the taste and color, I like to use Green Chillis.   I love the Taste and the Slim Jim type carries just about the heat I like.

For a Gal of Chili 5 or 6 roasted and peeled works for me.

The Packet stuff  just has enough red chili powder to add some color,  Maybe some cumin and rest is SALT.

Cool, So it cheaper to use all Natural ingrediants because they charge like hell  for them sauce's and I always get a thirst that I cant cure,

That's what we do.   Everytime I try to make something with a Packet, I make  Balls of it.    No Two Packs are the same.   Same here.   Some times you can get three for a dollar but they just don't do it.
