Blessings make me sit up and take notice... I am not religious myself, but I notice them and often remember. So I should say, ni niskomitin (I am thankful.)
Ireland is a great country for casual blessings, like:
Saint Dunstans blessing on the beams of your roof. (Very old.)
When entering a pub:
Bless everyone in this house. (Very irreverant.)
Also, a much repeated one:
May you be an hour in Heaven before the Devil knows you are dead.
Or: May the wind be always at your back. (Not very religious.)
