If you eat out here in Australia, you pay a big premium for Mexican food. But I cant get enough of Tacos and tortillias mmm love the stuff love mexican food and Tequila

...FOOD Huh? IN JAMAICA..?? Well, the pirates started to hunt wild boar, and made a preseved meat out of them..called BOUCAN...hence the name "Boucaneers"..Buccaneers.. The use of a very slow (smokeless, even) wood fire , and lots of salt..to cure and preserve wild hog was also undertaken (to a more sophiticated level) by the escaped slaves or "Maroons" in the verry mountainous north-east of Jamaica. Not having an obvious, smoking, cooking fire made it easy to prepare food in the wild, plus evade detection by the the British soldiers searching for them..they not being able to detect their campsite, due to the almost smokeless fire that was involved.
  Today, "JERK" is almost worldwide..consisting of a mix of spices..allspice, cinnamon, nutmeg, pepper (habaneros or similar), (wild cherry, sweetwood or wild cinnamion ..for the wood), salt, escallion, and ANYTHING other your heart desires..its very much like S.Western "bobby-cue" in the USA...low and slow cooking.. BUT its FIERY..to some palates..

Santa Maria is the home of Santa Maria style BBQ a combination of paquito beans and Tri-Tip (a cut like top block) cooked over red oak fire.  It is awesome.

Such an old thread, but I'm in NC.... So BBQ (Lexington style)! 

Naturally anything southern has some claimed roots here too.
 
Odd as it sounds, pimento cheese and hot sauce as well!   Stan's Pimento Cheese is
a local fav, and has a real following from past visitors to the area.  Then there is Texas
Pete Hot Sauce... originated in Winston-Salem, NC... about an hour from here.   Great

We grow some great beef here in the Grande Ronde Valley of northeastern Oregon, but none of the local  restraunts seem to be able to cook a really good steak...   beef steak on the home barbecue!   And home barbecue burgers!   Yummmm!
