Ebinger detector has small piece of metal (i think it was metal) aprox. 1x1cm  with the bolt, very close to the coil and it was used for adjusting sensitivity. any ideas what it was and how work? Also in the center of the coil there was metal bolt used for connecting the coil with detector body.

Can you give mi any ideas about it?

I have no direct experience with that brand so what I am suggesting here is just a possibility.

Some coils have active circuitry inside of them to adjust their frequency to better match the detector's internal circuitry. None that I have seen have had an adjustment. I'd suggest that you grab a few items like a gold ring, common coins and a chunk of iron to see what happens to the machine as you adjust it for each type of item. Air tests should give you some idea. Keep a written record of your tests so you can be sure your memory isn't playing tricks on you later.

Sliding the bit down towards the coil may induce a target of some type.  Then you reset the Threshold down and it will not see the Iron?

It can be good idea to minimize external moving parts for underwater md. But i have to fins the solution.
