This is a nice looking project. Could you do us a favor and attach the files that match this revision of the PC board? There are so many versions around that it would be a good idea to put the file here with the picture of your board.

Here we go with the files, I haven't redrawn the schematic I just used an existing one, a couple of the pots are labelled as resistors but its ok to use

Can you indicate which resistors are OK to replace with pots.  List of resistor locator numbers is OK

I have amended the schematic quickly to show the pots as on the board

If using on land you may wish to replace with pots mounted on your case, certainly for volume at least
