I've never metal detected, but I am interested in trying it.  Can you even pick up diamonds on a detector?

Diamonds are not metal so the answer is an indirect no. Why indirect? Because diamonds are often found in rings which are metal. Thus, by indirect detection, a ring found with a diamond is a yes to your question.

There is no detector that can find diamonds unless they are mounted in metal. Usually, that metal is gold or platinum.

What GoldDigger1950 Said. Good Luck with your Metal Detecting it's a Fun hobby, Just remember for every piece of value ( rings, coins, etc) you Dig up and Find, there are usually 3 that you dig up and have no value. (bottle tops, pull tabs etc.)
I dig all finds regardless and the trash items i haul off and dispose of properly.
