I was at a local park yesterday and had a very frustrating experience!  I have had this happen before as well.  I recently got a White's MTX 300.  I am still trying to come to terms with it!  Lol!  Anyway, I got good target signal and began digging.  I don't recall what the pinpointer said initially for depth but it was fairly deep.  I pulled a plug, removed some dirt, and checked again.  It now said 8 inches.  I dug some more and checked around with my handheld pinpointer.  Nothing.  I checked again with the detector and it said 5 inches.  Now I already have a hole that is 8 inches deep and I am centered over where my dectector's pinpointer tells me the target is.  I dig some more.  Now I am 12 inches deep and still nothing.  (Just a note, the frequency stayed the same throughout the digging.  Sometimes it changes for me as I remove dirt.  That's a topic for another time!)  I thought it might help if I make the hole bigger.  I removed another plug about the same size as the first (6 inches), just below it, dug it down to 12 inches, and still nothing.  After about a half hour, I gave up in frustration and filled the hole back in. 

I guess my questions are:
How does the integrated pinpointer measure its distance?  Is it from the search coil or does it know that there is air between itself and the bottom of the hole if you can't fit it inside?
Secondly, is the center of the coil necessarily the center of the pinpointing taking place?  Is it possible that I need to learn "how my gun shoots", say, slightly off-center?

I think this has probably happened to us all at one time or another.
Sounds like a "false" signal, might be due to a "hot rock" or heavily mineralised soil.
Best thing to do is get yourself some "targets" coins, bottle tops, nails whatever.....
Bury them at various depths in your yard. (mark them with various colored golf tees or the like).
Then go out and learn the different audio and screen responses you get.
You can check how accurate your pinpointing and depth reading are this way too.
Personally, I've never relied on "depth" readings or "Target i.d's", I haven't found one yet that is anywhere near accurate.
Oh yes...... that reminds me! I had this very situation once... signal... dig hole....nothing there.... still a signal.....dig deeper....still nothing...... and so on......until I gave up.

When I got home I realised I was wearing steel toecapped boots!

LOL thought I was the only one that did that.

Not sure about the MTX but most detectors will give false signals from time to time.
