Spanish dip needles are really a dip compass. They point in direction of the dip in the earth's magnetic field. the magnetic field of the earth has both horizontal and vertical vector components. The dip is the vertical component. At the north magnetic pole the dip is vertical as the magnetic field goes directly into the earth at that point for the dip is 90 Degrees. At the magnetic equator the dip is 0 degrees.
So when you ask do they work? Yes, they work for what they really are intended for; namely, measuring the local magnetic field dip or vertical magnetic component. For finding treasure or minerals now that is a different question. There is some evidence that gold is anti-magnetic. That is, it repels a magnetic field to a very mild degree.
So, if you have an accurate enough dip meter you could scan a given area and if the magnetic dip is not the same than there is something in that area affecting the magnetic field.
For myself, I wouldn't both with one.
