Ocalasix:
I can guarantee that you are not alone....
I have talked to TH'er Store Owners who did not know!
AND!
These are the guys, people go to, to get information/equipment!
I once asked for a Geological Survey Map, of a certain area,
This Store is in Arizona.
And!
The owner brings out a Topographic Survey Map!
Nope!
No where close
, to being a Geological Survey Map.
In doing so, He only demonstated(s) his level of expertise/knowledge.
But!
Back to your Questions
1... Basically, An Orthophotoquad Map, is a large, regular Topo Map sized Black & White Aerial Photograph 
It is GREAT! for showing the works of man, almost or even better than an IR Map
2...An IR Map is an Infrared Map, which come in B/W & Color ...
b] IR [/b] is great for showing any surface area that has been distrubed...
ie: A road, a mine/tailings, a trail, a cabin, a burial/cache, etc...
OR!
Anything that has broken or disturbed the orginal surface !
On a B/W IR Map, ( And! Also on an "Ortho") the distrubed area shows up as a "white" or very light colored area/spot.
OR!
As in the Military, some "dude" walking around or hiding in a covered "FoxHole" / Gun position !
This just a very general explaintion...

Aerial photos, such as your "Google Site/maps"
Are GREAT!
I love the be able to get a quick, Straight Down Look!
But!
There's the "Rub" !
You are looking "straight down" !
If you need a look into that shadow...or! From any sort of an angle(s)!
You're outta luck!
What, We really need is, interactive 3D Maps!
Sure!
        I'm sure,
                     We'll see that real soon!  Tongue

i posted national geographic back roads explorer 3D somewhere on here.

all 50 states on 18 cd's.go ANYWHERE virtually sit-n-spin -hover-fly...awesome piece of software

I have purchased a few of the IR photo copies. About $30.

Spy plane photos were taken of the whole country after ww2. They have been released to the public. You can view them with a magnifying glass and see extreme detail. At one time there was an on-line index where you could figure out out which reels had photos of your area of interest.  Then you could pick out individual frames.
