Most Dried Meats can be kept for a year if you can keep it dry and the bugs or Rats away from it.

Storage is the Problem.

You can Curle up in them quite Well and get to hell out of the 60mph winds.    In the Winter you can make a coffee can size fire to keep warm.

There bigger then you think.   Origanaly they was chinked with dirt to keep the Winds out.

I would put the time line at around 2 to 400 years but things like that could be more and why is it built at the bottom of a hill

It's not.  That's perspective. If I backed up about 8 meters from where I was standing, I would have stepped off a small cliff and rolled down a steep incline into about a 50 meter deep arroyo.   It isn't at the top of the "cliff" but it cure isn't at the bottom of the hill either.
